Pumpkin Oatmeal Cookies with Cream Cheese Frosting
Hey y'all! I have been getting into the fall spirit and doing a lot of cooking and baking. I don't know what it is about the fall season that seems to bring in so many different flavors that we don't typically consider in the other 3 seasons. This particular recipe is one of my all-time favorites to make in fall that just sums up the spirit of the season. These pumpkin oatmeal cookies are OUT OF THIS WORLD and then you get to add chocolate chips and cream cheese frosting and they are even better.
I decided to do a recipe vlog and walk y'all through this recipe and show you how to make it. The recipe is also right down below so you can have to keep and share to everybody that you know because trust me, you will want to share this recipe!

Pumpkin Oatmeal Cookies with Cream Cheese Frosting
Serves: 24 Prep Time: 10 mins. Cook Time: 13 mins. Total Time: 23 mins.
Ingredients:
Pumpkin Oatmeal Cookies
~2 cups all purpose flour
~1 tsp. baking soda
~1 tbsp. ground cinnamon
~1 tsp. ground ginger
~1 tsp. ground nutmeg
~1/4 tsp. allspice
~1 tsp. salt
~1 1/2 cups rolled oats
~1 cup butter, melted
~1/4 cup molasses
~3/4 cup brown sugar
~1/2 cup granulated sugar
~1 egg
~3/4 cup pumpkin puree
~2 tsp vanilla extract
~1/2 bag of milk chocolate chips
Cream Cheese Frosting
~1 (8 oz.) package cream cheese, softened
~1/2 cup butter, softened
~1 teaspoon vanilla extract
~3 cups confectioners' sugar
Directions:
Cookies
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl whisk together the flour, baking soda, ground cinnamon, ground ginger, ground nutmeg, allspice and salt. Stir in the oats and set aside.
3. Add the melted butter into the bowl of a stand mixer (if you don't have a stand mixer that is fine just get ready for an arm workout). Add the molasses, brown sugar and granulated sugar. Next add in the egg. Once fully incorporated add in the pumpkin puree and vanilla and beat until fully combined.
4. Slowly add in the dry ingredients and mix until just combined. I even add Nestle Toll House Milk Chocolate Chips to add a little something extra to the cookies that make them so delicious.
5. Line a baking sheet with parchment paper. Drop 3 tbsp. sized balls of cookie dough onto the baking sheet spread out. Bake for 10-13 minutes. Allow cookies to cool completely (if you can) before putting on the frosting
Cream Cheese Frosting
1. Beat cream cheese, 1/4 cup butter, and 1 teaspoon vanilla extract in a bowl with an electric mixer until soft and creamy. Beat in confectioners' sugar, about 1/2 cup at a time, until frosting is smooth and spreadable. Frost cooled cookies with cream cheese frosting.
