Pumpkin Oatmeal Cookies with Cream Cheese Frosting

Hey y'all! One of my favorite parts of fall is getting to make a lot of fun and awesome fall themed foods. My "big brother" has made these for us for the past couple of years and I love them and think they are the most delicious thing out there. They are also so perfect for the holidays and a yummy little treat to bring to any Thanksgiving festivity. So I wanted to share the recipe with all of you and trust me you will love these and I can guarantee everybody in your household will too!

Pumpkin Oatmeal Cookies with Cream Cheese Frosting

Serves: 24 Prep Time: 10 mins. Cook Time: 13 mins. Total Time: 23 mins.

Ingredients:

Pumpkin Oatmeal Cookies

  • 2 cups all purpose flour

  • 1 tsp. baking soda

  • 1 tbsp. ground cinnamon

  • 1 tsp. ground ginger

  • 1 tsp. ground nutmeg

  • 1/4 tsp. allspice

  • 1 tsp. salt

  • 1 1/2 cups rolled oats

  • 1 cup butter, melted

  • 1/4 cup molasses

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 egg

  • 3/4 cup pumpkin puree

  • 2 tsp vanilla extract

  • 1/2 bag of milk chocolate chips

Cream Cheese Frosting

  • 1 (8 oz.) package cream cheese, softened

  • 1/2 cup butter, softened

  • 1 teaspoon vanilla extract

  • 3 cups confectioners' sugar

Directions:

Cookies

1. Preheat oven to 350 degrees F.

2. In a large mixing bowl whisk together the flour, baking soda, ground cinnamon, ground ginger, ground nutmeg, allspice and salt. Stir in the oats and set aside.

3. Add the melted butter into the bowl of a stand mixer (if you don't have a stand mixer that is fine just get ready for an arm workout). Add the molasses, brown sugar and granulated sugar. Next add in the egg. Once fully incorporated add in the pumpkin puree and vanilla and beat until fully combined.

4. Slowly add in the dry ingredients and mix until just combined. I even add Nestle Toll House Milk Chocolate Chips to add a little something extra to the cookies that make them so delicious.

5. Line a baking sheet with parchment paper. Drop 3 tbsp. sized balls of cookie dough onto the baking sheet spread out. Bake for 10-13 minutes. Allow cookies to cool completely (if you can) before putting on the frosting

Cream Cheese Frosting

1. Beat cream cheese, 1/4 cup butter, and 1 teaspoon vanilla extract in a bowl with an electric mixer until soft and creamy. Beat in confectioners' sugar, about 1/2 cup at a time, until frosting is smooth and spreadable. Frost cooled cookies with cream cheese frosting.

I hope y'all really go and try these cookies because they are so easy to put together and are so delicious! Thank you all for reading!

Love, D
